Baked Chocolate Cake Doughnuts
Makes about 16 3″ doughnuts
3 cups all-purpose flour
1 cup unsweetened cocoa powder
1 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1 teaspoon salt
1 large free-range egg
3 large free-range egg yolks
1 cup buttermilk
1 teaspoon pure vanilla extract
1/3 cup vegetable oil
3 cups all-purpose flour

1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1 teaspoon salt
1 large free-range egg
3 large free-range egg yolks
1 cup buttermilk
1 teaspoon pure vanilla extract
1/3 cup vegetable oil
Grease doughnut pan, set aside. Preheat oven to 350ยบ.
In the bowl of a stand mixer fitted with the paddle attachment, mix 1 cup flour, cocoa powder, sugar, baking soda, cinnamon and salt.
Add eggs and yolks and mix well.
Add buttermilk, vanilla and oil. Mix until combined.
Add remaining 2 cups flour and mix until just combined.
Transfer batter to a large pastry bag fitted with a #809 round tip. Pipe doughnut rounds in pan making complete circles.
Bake for 14-16 minutes or until a toothpick comes out clean.
Let cool for about 20 minutes in the pan. Carefully remove doughnuts and place on wire rack to cool completely.
